Quick & easy beans and rice

With a long week of late days, we resorted to food from the cupboards so beans & rice it is.

We sauteed some leftover leeks and then added black beans (not drained), carrots, and corn followed by some tomato paste, cumin, coriander, and s&p.  The beans turned out well, but with a distict, slightly sweet flavor that I think came from the leeks.  I think it could work well paired with something rich or citrusy in order to balance the flavors better, but a little bit of sour cream and some lemon was all we had to work with.  Maybe next time, the leeks and beans would go well with fish tacos?
