Pizza leftover-bagels

The best part about making all of that wonderful brunch food is enjoying the leftovers for the entire next week.  Especially the bagels, which we enjoyed in epic pizza bagel fashion.

One batch of homemade pizza sauce lasted us through this whole endeavor perfectly.

Approximate Pizza Sauce Recipe

1/2 onion, diced

2 cloves garlic, diced

1 28oz can crushed tomatoes

1 T hot red pepper paste

oregano, tarragon?, salt, and pepper to taste

Saute the onion and garlic until soft.  Add in the tomatoes and spices and simmer uncovered (or at least partially uncovered if you want to control splashing) until it has thickened substantially.  Adjust the spices to your liking and enjoy!

Then just add your toppings and cheese -or- cheese and toppings, depending on your personal pizza-making preferences.  We broiled the pizzas for 5-10 minutes, until golden brown.  This worked perfectly even for frozen bagels, surprisingly.  And, one round went in the oven to stay warm (~200 degrees), but ended up making the bagel crust a bit to crunchy for our liking.

We even got to share some bagel pizzas with our friends!  And, somehow, surprisingly, we still aren’t sick of  bagel pizzas.  What a wonderful food!
