Why are breakfast sandwiches SO good?

With leftover bagels and champagne from New Year’s Day, we got to enjoy the second day of 2010 with breakfast sandwiches and mimosas.  I guess this year is off to a pretty good start…
We toasted bagels and then melted leftover swiss cheese on top, in the broiler.  USQ greenmarket grass-fed beef sausages were pan fried in quarters followed by some over-easy eggs.  The whole thing stacked up to be a filling treat, though maybe a bit hard to eat 😉
