Pot pie

No pots, no meat, but a delicious and filling pot pie nonetheless.

Pot pie fillingWe sauteed onion, carrot, potato, mushrooms, and green beans and cooked them with a cup of chicken stock until it thickened (we added some flour near the end as well).  It was seasoned with s&p and thyme and baked in the pastry shell for ~45min.  This was delicious but very rich—maybe next time it would be okay if the sauce wasn’t thickened before baking quite so much…
