We heart beets

20090909-DSC_0199Inspired by some beet risotto recipes, we threw together a hearty, fall, one-pot-meal.

20090909-DSC_0194We boiled CSA beets and added them to CSA leeks, risotto, and broth, and let simmer.  We also sauteed up some Italian sausage (definitely not necessary) that added to the heartiness of the dish.  Topped with parmesan, this dish was almost overwhelmingly rich, and could be tweaked, but the beet–risotto combo is great.
