Leftover lettuce

20090718-DSC_0102We pre-baked a fresh pie crust (standard Betty Crocker recipe, with some whole wheat flour subbed in).

20090718-DSC_0104And sauteed lettuce until it gave off its water—following a recipe from mummy a. care of cea 😉  We added frozen peas and heated until warm.  We mixed 3 eggs, cream, milk, and parmesan cheese, added the lettuce and pea mixture, seasoned with s&p, and baked 40 min at gas mark 5.
