Winter soup and winter salad

The rest of the East coast was buried in snow, so we figured we should eat something warm and satisfying as if we were caught in the snowstorm too.  As a fun variation on wild rice soup, we tried one with squash and sausage.  ib also made a wonderful salad with cabbage and raw beets that we could not get enough of.

Chicken tortilla soup

ib claimed he might be coming down with something, but that was just an excuse to make this spicy and immensely delicious soup.  The recipe is one of dsd‘s signature dishes.

With a long week of late days, we resorted to food from the cupboards so beans & rice it is.

Couscous and egg salad lunch

I work from home sometimes, and when I don’t have leftovers from lunch, it seems silly to run out for some kind of sandwich—especially when there are minimal prep time ingredients around.
